Breakfast with Julie


Yesterday morning was a real treat with my friend Julie and her husband.  We went up to their North Georgia mountain cabin for the weekend, and had the most delicious meals that my friend cooks.  

This was the breakfast egg strata that she made.  I love it when people cook without recipes and that's her style.  She whisked about 8 or so eggs, some crumbled portuguese rolls, sauteed some baby bella mushrooms and onion then added a couple of handfuls of both grated cheese and fresh spinach.  To make it fluffier, she tossed in a sprinkle of baking powder as well.  A few seasonings and she popped it in the oven at 350.  It was delicious.

This is Julie. She's actually a PhD, who has been working on a bill in front of the legislature regarding concussions and head injuries.  She teaches college, does neural something something research (you fill in the blanks, because I can't remember all the technical words), raised three wonderful sons, (one is my son's good friend), and lives a very full life.  Did I mention she's an excellent cook?

I hope you all have friends like this in your life. Not just the good cook type person, but someone that you really enjoy being around.  And I also hope you had as much fun as I did this past weekend.  Laughing, chatting and catching up are good for the soul.
